This April was our 8 year anniversary of the beginning of our meatless life. We do eat fish every once in a while so we are technically Pescatarians. It started out as a month long experiment to try and eat some new foods. Once we did more research and started feeling the effects of cutting it out, it just became the new way of life for us. There are so many great meat free recipes so variety is never a problem.

With May just around the corner (literally tomorrow) and the shortage of meat in grocery stores thanks to the pandemic, I thought it might be a good time to share some of our favorite meat free recipes. Maybe you’ve thought about doing Meatless Mondays or wanted to cut back on your red meat consumption. Maybe you just can’t find any that is affordable and decent at the grocery store right now. For whatever reason you need them, we are sharing our five favorite meat free meals for you to try.

1. Zucchini Lasagna

This one sits highest on our list right now because it’s fresh in our minds. We just made this over the weekend and shared with our host family. It was a big hit. This recipe calls for rolling up the lasagna noodles into individual rolls, but you can make it into a classic lasagna by just making more noodles and a little more filling. The leftovers are fantastic and it’s incredibly comforting.

2. Buffalo Cauliflower Po’ Boys

Justin missed buffalo wings for a while after giving up chicken. We quickly discovered that it wasn’t the chicken wings he missed, but the sauce. He would tell you that the chicken was just a delivery vessel. So, we tried this sandwich and it’s now one of our favorites when we are cooking for friends. Cauliflower tends to taste like whatever you season it with so this sandwich is awesome. Also, the blog this recipe is on has so many of our favorite recipes on it (cocktails included).

3. Sweet Potato Enchiladas

Enchiladas are something I could eat every other day. In fact, I did when we were traveling through New Mexico & Arizona. There are tons of different recipes that we make at home, but this is one of our favorites. There are a lot of different flavors in this recipe and it makes amazing leftovers.

4. Skillet Pasta with Squash

Anytime a recipe says that I only need one pan, it’s an instant favorite. I feel like all I do is dishes during this quarantine, so whenever there is an option for fewer dishes – I’m in. This recipe calls for summer squash, but we have used all kinds of vegetables – it’s whatever is left in the produce drawer. We also use Parmesan cheese instead of Romano because we always have it in the fridge.

5. Quinoa Bake

Quinoa can do all kinds of things. It’s something we always have in our pantry. There are quite a few different quinoa bakes that you can make. I’m linking two recipes that we’ve used, but once you make these once – you’ll realize how easy it is to swap out the ingredients for different spices or vegetables to completely change up the dish. If you want to make lunches instead of dinners, I use a muffin tin and make individual portions instead of an entire pan.
